Salmon flesh is generally orange to red in colour, although there are some examples of white fleshed wild salmon. The natural colour of salmon results from carotenoid pigments astaxanthin (E161j) in the flesh. Wild salmon get these carotenoids from eating krill and other tiny shellfish.

Pacific Northwest Coastal dwellers have long respected the salmon. Most Native Americans of the Pacific Northwest shores had a ceremony to honor the first wild salmon return of the year. For many centuries, Pacific Northwest Native Americans and, beginning in the 1800s, American settlers, caught salmon as they swam upriver to spawn. A famous spear fishing site on the Columbia River at Celilo Falls (pictured here) was inundated after the Dalles Dam was built on the river.
